Summertime Fig & Ricotta Toast

Every summer my brother, sister and I waited with anticipation for our fig tree to produce fruit.

At least once per day we would examine the tree for new growth. When the small teardrop-shaped green buds appeared, we could not have been more excited. We patiently waited for the day my parents would allow us to pluck the oozing figs and enjoy them.

While we could have easily devoured the entire tree’s worth of figs before they even made it inside the house, we used restraint. We knew that the sweet luscious purple flesh of the fig is even more delicious when combined with other ingredients. Both then and now, one of my favorite summer activities is discovering new fig recipes. I am thrilled to share this one with you!

Summertime Fig & Ricotta Toast

Directions

  • Preheat oven to 425 degrees.
  • Slice sourdough bread into even slices and lightly coat with olive oil. Place sliced bread on an ungreased baking sheet and bake for 2 minutes. Flip bread and bake for an additional 2-3 minutes.
  • Remove bread from oven and cool on rack.
  • While bread is cooling, prepare hot honey by adding honey, chili flakes, and hot sauce to a saucepan. Bring honey, hot sauce, and chili flake mixture to a simmer and remove from heat to cool.
  • Use a food processor to whip ricotta until smooth, add milk if texture is too thick.
  • Pipe whipped ricotta onto toast and top with drizzled hot honey and sliced figs.

1/2 loaf of sourdough bread

½ cup of honey

½ tbsp. chili flakes

1/2 tbsp. hot sauce

1 cup whole milk ricotta

¼ cup of milk (optional)

5 fresh figs
